Experimentation with a new apple variety called Cosmic Crisp, created by crossing Honeycrisp and Enterprise, began in 1997, and since then, $10 million has been invested in its development. The result of this 23-year project is an apple that perfectly meets current consumer expectations while also aligning with the previously idealized image of an apple. It is sufficiently round, with a burgundy skin, creamy white and dense flesh, and a pleasant taste. Under proper conditions, it can last until the next harvest and remains just as crisp.
Like other apples, the Cosmic Crisp absorbs oxygen through lenticels, or lenticels on its skin. On this apple, the lenticels are so light compared to the dark red color of the skin that one member of the testing focus group compared the fruit to stars visible in the night sky. It can be said that the analogy was so characteristic of the apple that the image seen ultimately appeared in the apple's name.
